One word to describe us... local. We are Montana and we serve Montana. Founded in 2020, P. Gibson's aims to bring Great Falls and Montana history to a culinary experience. We are named after Paris Gibson, the founder of Great Falls, who is famous for his role in building the dam at Black Eagle, the major rail system throughout town, founding a smelting company for Butte Copper, developing the city grid, and creating the extensive park systems which include planting a majority of the trees in this town. P. Gibson is considered a pioneer and the father of Great Falls.
We hope to encapsulate history through our restaurant's design as well as our food and drink offerings. We've hand-selected different Montana-inspired foods and vendors to give you the Montana dining experience. From our Huckleberry BBQ Burger to our Flathead Cherry Mule as well as local brewers, there is something on our menu for everyone.
